Groovybabe’s Stuffed Mushroom
Ingredients:
- 1 large flat mushroom
- 30g Quinoa
- 20g soft cheese
- 1 fillet of salmon
- 3 plum tomatoes
- peppers
- 1 shallot
- parsley
Instructions:
Cook the quinoa in the same way as rice. Chop the vegetablles finely and add into boiling quinoa. Add the fillet of salmon as well. Leave to cook, once done drain the water and mix it up ensuring that the salmon pieces are small. Fill the mushroom, add the soft cheese to the top and stick in the oven until browned.
Serves two - 255 calories per serving

That there is a LOT of stuff to fit inside one mushroom! Even the biggest portobello i’ve ever seen would be overflowin’. Is that the idea? Is it overflowin’ all over the show? yum. I have a fondness for mushrooms. mmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmm
